Wow -- we had the rainiest, coldest June! The temperature hovered between 5 and 13 C (40 – 50 F). I’m surprised our garden survived. It is giving us plenty of greens. Today I harvested coriander and the smell reminded me of Mayapur. Fresh coriander is subtle, although strong. The scent of shop-bought herbs is different.
Why wouldn't you be talented? Talent means interest. We can learn anything - and I mean anything - if we become interested in the subject and educate ourselves about it. You have an inclination, keep fanning it.
This is stunning cake, Laxmi! Summer cake can't get lighter than this - love the use of oatmeal cookies. When I was kid, my family didn't own an oven and my grand-ma use to make cake from store bought wheat cookies. Soaking and layering them with thick chocolate milk and freezing in cake shape! Major flashback :)
Many times the worst part of a cake is the cake itself! Everyone likes cream and jam, and the cake is just an architectural structure that holds them together. Of course, if it is moist and flavorful it adds texture and contrast, but it often goes unnoticed. Cookies are nice because they are light and crunchy – completely different from cream! This is the kind of cake you assemble in an emergency situation when you need a quick dessert. I don’t think a true cake-aficionado would appreciate it in a proper party!
There are many cakes using cookies or puff-pastry in European cuisine. Still, none of them are as popular as the traditional layer-cake.

ReplyDeleteWhat kind of oats do you use? I imagine not grains, flakes, rolled oats?
ReplyDeleteI used fairly small size rolled oats. Any kinds of oat flakes would do. Also, you can omit the almonds and substitute the amount with rolled oats.
