Days are getting darker and darker. The arctic lack of light creates a sub-human environment. My camera is able to perform indoors an hour or two a day. It is difficult to coordinate cooking, photographing and the rest of daily duties when there is such a short burst of daylight. Therefore I will concentrate on other responsibilities for the time being and return to blogging in January or February when the days are getting longer again. To those of you who will celebrate Christmas, I wish you happy holidays! May we all enter the new year with a deliberate mind and grateful heart. Thank you for your feedback and interest over the past months.

ReplyDeleteI understand your lighting issues. I've never lived in Finland but in "northern" Sweden where light was really precious. But to be honest, it doesn't seem much better in Berlin. It's just totally overcast all the time. So happy holidays to you and enjoy your little break from the whole blogging thing. I'll be super excited when you return! Every post of yours is seriously like a little present. It sounds ridiculously cheezy, but it's true.

ReplyDeleteAnushruti, I gave the cake to a friend. I didn't cut it for that reason. She told me afterwards the cake was excellent in taste & texture. I was afraid her children might find it too tangy, but she said they loved it.

ReplyDeleteI would say 22-24 cm (8 1/2 - 9 1/2 inch).If you make smaller, the baking time may vary. Thicker the cake, longer it takes to bake. Good luck!
DeleteI used a 22cm pan. Was a little anxious when I saw that it made quite a stiff batter. Looked a little higher than yours but lovely and spongy on the inside. I did not have any spelt flour but it still turned out fine. I didn't manage to get many round rings out of the clementines though! Mostly broken pieces unfortunately. Also I think my white chocolate topping was a little on the thick side. Overall, I'm quite pleased and I know what to work on for next time! Thank you so much! Your blog is really inspiring!
ReplyDeleteThanks for reporting! Spelt and wheat bake a bit differently. To me it seems wheat absorbs more liquid. When making eggless cakes, a good rule is to use as little flour as possible. This way, the cakes become very soft. It's especially good if there's no need to cut layers.
